羊肉米紙卷


材料:


紅酒燜羊膝+鮮蘑菇粒


材料:羊膝,紅蘿蔔,洋蔥,西芹,蒜頭,紅酒,蕃茄膏,鹽,黑胡椒碎,上湯,蘑菇,香葉,其他香料.


(A)羊膝,(B)[紅蘿蔔,洋蔥,西芹]切大粒,蒜頭數粒連皮輕拍加(C)紅酒過面醃一晚.


A,B,C分開.A pat dry用鹽,胡椒略醃,用大火煎各面至有色後盛起.然後炒B至乾身,加入蕃茄膏炒香,再加入C及上湯,再加入香葉及其他香料.煮沸後用小火加蓋燜1.5小時.然後拿出羊膝,隔去蔬菜,汁液再煮沸後加入小粒(洋蔥,紅蘿蔔)及蘑菇粒.用麵糊調濃度,

材料:羊架,鹽,黑胡椒碎,其他香料.


羊架面界大鑽石紋,用鹽,黑胡椒碎,其他香料,少量生抽醃數小時.用大火煎香各面後入180度焗爐焗15~20分鐘,拿出後用鋁紙覆蓋.


咖哩羊肉


材料:


蒜泥法邊豆


材料:法邊豆3包,蒜頭.


法邊豆汆水後盛乾,爆香蒜泥放入法邊豆.


Nann (For 6)


材料: 500g All purpose flour, 20g Baking powder, 10g Sugar, 5g Salt, 200ml Water, 20g Melted butter, 1 Egg.


Mix all ingredients except water together into a large bowl.  Knead the dough by adding water in several times until the dough become smooth.  Cover with wet kitchen towel and keep in warm place for an hour.


Preheat baking tray in an oven for 250C.


Divide the dough in 10 equal portions and make a round ball, cover with wet kitchen towel for 10 mins.


Flatten each ball with rolling pin into round disc appox. 6" to 8" and then stretch on side in the shape of an elongated ovel shape.


Grease the hot baking tray with butter, place the naan and bake for 4-5 mins.  Brush butter on the naan as soon as removing from the oven.  Serve hot immediately.
